31 Things To Do with CSA Vegetables

When in doubt with any veggie: quick-pickle! 
It’s
a great way to add flavor and tenderize.  Slice the veggies very thin if you want them ready soon, or thicker if you want them to last longer. Mix with the pickling liquid, refrigerate, and they’ll stay good for about a week.

Kohlrabi

  1. Kohlrabi Slaw.
  2. Kohlrabi Home Fries.
  3. Spring Roll filling.
  4. Add to salads.

Garlic Scapes

  1. Add to vegetable and grain salads.
  2. Cut and blanch like green beans.
  3. Garlic Scape Pesto.
  4. Add to stir-fries.
  5. Make grilling skewers.

Turnips

  1. Blend into creamy soup.
  2. Roasted Turnip and Sauteed Greens.
  3. Turnip Pickles.
  4. Glaze with honey and lemon.
  5. Cheesy Turnip Gratin.

Chard

  1. Sauté chopped chard and toss it with pasta.
  2. Creamy chard soup.
  3. Spicy Pickles.
  4. Bake chard into quiche.

Beets

  1. Roasted beets.
  2. Add sliced roasted beet to sandwiches.
  3. Add to salads, pastas and grains.
  4. Chocolate Beet Cake.
  5. Thinly slice and eat raw.
  6. Crispy beet chips.
  7. Beet Slaw.

Sugar Snap Peas

  1. Serve snap peas as crudités with dip.
  2. Mix into salad or slaw.
  3. Cut into long strips and add to salads.
  4. Add to stir-fries.
