Title: Cheddar Chive Drop Biscuits *

Yield: 18 servings

2 c Flour
3 ts Baking powder
1 ts Salt
1/2 c Shortening
1 1/4 c Plain yogurt
4 oz Cheddar cheese; shredded
1/4 c Fresh chives; chopped

Heat oven to 450.

Grease cookie sheets. In large bowl, combine flour, baking powder and
salt; blend well. Using pastry blender or fork, cut in shortening until
mixture resembles coarse crumbs. Add yogurt, cheese, chives; stir just
until moistened. Drop dough by generous tablespoons onto greased cookie sheets.

Bake 9-12 min. or until light golden brown.

Serve warm.

Title: Chive Cheese Omelet

Yield: 1 omelet

4 Eggs
1 ts Water
Salt and pepper
1 ts Chopped fresh parsley
1 tb Sweet butter
3 Chive blossoms, broken into
Individual florets
2 tb Grated Swiss

Whisk together eggs, water, salt, pepper and parsley. Melt butter in an
omelette pan over high heat until butter sizzles. Pour in egg mixture,
shaking pan immediately. With the flat side of a fork, stir eggs and tilt
pan in a circular motion until eggs have begun to set. Sprinkle chive
florets and cheese down the center, then fold omelet over. Garnish with
chive blossoms and serve.

Title: Potato Salad with Chive Blossom Mayonnaise
Categories: Salads, Potatoes, Herb/spice
Yield: 1 bowlful

2 lb Small red potatoes
1/3 c Rice vinegar
1/4 ts Dry mustard
1/4 ts Sugar
1/4 c Chopped onion
1 c Mayonnaise
2 Cloves garlic; crushed
3 tb Chive blossoms; florets and
-leaves, chopped
1 ts Lemon rind
1 tb Chopped parsley
1 tb Chopped bell pepper
Salt and pepper

Boil whole potatoes until tender. Let cool, then peel and slice. Heat
vinegar with mustard and sugar and pour over potatoes. Mix in onion. Toss
well and cool.

Combine remaining ingredients and pour over potatoes; mix well. Season to
taste with salt and pepper. Garnish with whole chive blossoms and serve.
