(10) January 2008 - The Vault
This time of the year it is really hard to fit in any kind of restaurant meal, since we all visit family and friends, plus the parties. Food is aplenty! But, I was treated to The Vault on my birthday.
The Vault is one of the city's newest restaurants, located on Water Street in an old bank building. Enter the main door and go downstairs, where one is greeted very cordially and your coats are checked.
In a moment we were at our table. The decor is modern with a bar at the end of the room and tables behind it. I particularly enjoyed that the tables were not too close together and one could have a private conversation.
Service was prompt and efficient.
We made early reservations because I like to eat early, and also because it is the chef would most likely have time to create our "tasting menu" of multiple courses. I love the surprise of the meal as well as I believe that if you allow the chef to prepare whatever he likes to make, we would indeed have the best meal. And so it was this evening.
A glass of champagne was presented shortly after arrival. We had multiple courses, everything from soup to nuts, and every one of them wonderful. These were mini versions of their regular offerings on the menu. All was prepared to perfection with a lot of attention to detail and flavours. Steven Cardoulis, the sous chef, has outdone himself. The sommelier who matched wines with each course also did a perfect job.
I expect that every time we would ask for such a sampling of the menu, it would be different as their cusine changes. But most of us are real foodies would welcome such a change.
The price was reasonable for such quality. I would very much recommend that you visit The Vault and be ready for a culinary experience.
