Tabouli Recipe

TABOULI KIT. In addition to the ingredients in your Veggie Co-op Bag today, you will need fresh lemon juice, olive oil and salt and pepper to taste. (September, 20013)

Ingredients. 1 cup cracked wheat (bulghur)
1 cup very hot water
1 small cucumber, chopped (optional)
1 tomato, chopped
1 bunch of green onions, clipped thinly with scissors.
1/4 cup fresh chopped mint, or more, depending on preference for mint
1 bunch (cup) fresh chopped parsley.
1 garlic, minced (optional) or most tender parts, garlic scapes, stripped and chipped

Dressing (Or use your favourite light dressing.)
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
Salt and pepper to taste.

Directions.

Soak crack wheat in hot water until the water is absorbed, about 30 minutes.
Drain any excess water, if necessary, and squeeze dry.
Combine the salad ingredients, including wheat, in a medium bowl.
Mix the dressing ingredients together and stir into salad mixture.
Serve chilled or at room temperature. This recipe makes 4 cups, 6-8 servings.

We hope you enjoy this fresh salad, which we learned to make after experiencing it at a pot luck several years ago. If we are fortunate enough to have all of the ingredients available at the same time, we provide the bulghur for this recipe, as most people may not have it on hand. Of course, you can omit onions and/or garlic if these are not things you usually include in fresh salads.
